Recipe - Golden Nectar Real Leatherwood Honey Cake

110g butter
1 cup sugar
2 eggs
½ cup Golden Nectar Real Leatherwood Honey
2 ½ cups plain flour
2 ½ teaspoons baking powder
¼ teaspoon bicarbonate soda
1 teaspoon cinnamon
½ teaspoon salt
½ teaspoon nutmeg
¼ teaspoon ground cloves
¾ cup milk.

Cream butter thoroughly, add sugar gradually beating in well. Add eggs one at a time, beating well after each addition - then add the honey. Sift together flour, baking powder, bicarbonate soda, salt and all the spices. Add alternatively with milk, mix well. Pour into well greased 20cm cake pan. Bake in moderate fan forced oven at 180˚C for about one hour, check at 50 mins with skewer, return to oven if still a little wet.

Dust with icing sugar and enjoy with cream or plain yoghurt.
